I always brown the flour that I use to thicken the gravy. That adds flavor too. I use leftover coffee since I don't buy instant.

I only buy instant to use in recipes because my brewed coffee isn't strong enough for most recipe applications. It's the only thing I've found that will make carob taste as good as chocolate and it's a good replacement for Kitchen Bouquet (cheaper, too).
I brown the flour for some things, but I generally thicken my brown gravy with cornstarch so it stays dark brown and clear.

I made this the other day. I think I might have used too much coffee though. It was kid of overwhelming. But it was very good!

Valerie, probably 1 - 1 1/2 tablespoons would be enough for a 3 lb. roast, a little less for a smaller roast.

LOL, yeah I had a smaller roast and probably used 2 T. It was pretty strong. Sure didn't stop us from eating it though!
