What about a pot lid with a steam vent? Just remove the vent.

M, that would work fine for a small amount of butter, but I had 3 lbs. stored and want to store even more. I just need to keep it from floating up above the surface of the brine. What I really need is a perforated disc made of ceramic or glass, just heavy enough to hold them down. Would it have to perforated? I was wondering if a heavy plate would do the job. That said, I'm always on the lookout at Goodwill and yard sales for something like that to keep my kim chee cabbage submerged whilst it's soaking. I use a plate with a jar of rice on top for weight (for now).

A plate might work if it was small enough to fit in the jar, yet big enough that it didn't tilt in the brine. I was thinking 'perforated' so it would let the brine cover it, as well as cover the butter.
