I've made it with 1/4 WW flour and it turned out good, although a bit chewier than all white.
I don't see why it wouldn't work with self-rising flour, but you'd need to omit the baking powder and salt. Make sure you leave in the baking soda, though, because it reacts with the sour milk (or buttermilk) to make it rise.
