Amish Friendship Bread Starter
"Yeast, sugar, milk and flour ferment to make starter for sweet bread. Because the recipe produces so much starter, give some away to friends."
Important Note: Don't use metal spoons or equipment. Do not refrigerate. Use only glazed ceramic or plastic bowls or containers.
1 (.25 ounce) package active dry yeast
1/4 cup warm water (110 degrees F/45
degrees C)
3 cups all-purpose flour, divided
3 cups white sugar, divided
3 cups milk
In a small bowl, dissolve yeast in water. Let stand 10 minutes. In a 2 quart container glass, plastic or ceramic container, combine 1 cup flour and 1 cup sugar. Mix thoroughly or flour will lump when milk is added. Slowly stir in 1 cup milk and dissolved yeast mixture. Cover loosely and let stand until bubbly. Consider this day 1 of the 10 day cycle. Leave loosely covered at room temperature.
On days 2 through 4; stir starter with a spoon. Day 5; stir in 1 cup flour, 1 cup sugar and 1 cup milk. Days 6 through 9; stir only.
Day 10; stir in 1 cup flour, 1 cup sugar and 1 cup milk. Remove 1 cup to make your first bread, give 2 cups to friends along with this recipe, and your favorite Amish Bread recipe. Store the remaining 1 cup starter in a container in the refrigerator, or begin the 10 day process over again (beginning with step 2).

Bake in preheated oven for 50 to 60 minutes.

Combine the flour, baking powder, baking soda, salt and cinnamon. Stir into the starter mixture. Mix in the vanilla pudding mix. Fold in the chopped nuts, raisins and dates. Pour the batter evenly into the prepared pans.
Bake for 60 minutes in the preheated oven, until a knife inserted comes out clean. Cool for 10 minutes in pans before removing to a wire rack to cool completely.

In a large mixing bowl, stir together the Amish Friendship Starter, eggs, oil and vanilla. Gradually stir in the sifted ingredients until just blended. Finally stir in the chopped nuts and apples. Divide the batter evenly between the two prepared pans.

1 (5.9 ounce) package instant chocolate
pudding mix

1 cup vegetable oil

1 teaspoon vanilla extract
Preheat oven to 350 degrees F (175 degrees C). Lightly grease two 9x5 inch loaf pans.

1 cup chopped walnuts
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 cups all-purpose flour
Preheat oven to 325 degrees F (165 degrees C). Grease 2 - 9x5 inch loaf pans.
In a large bowl, mash together the shortening and bananas, then stir in the starter, eggs, milk, sugar, and walnuts. Sift together the baking powder, baking soda, salt, and flour. Fold into the banana mixture.
Divide batter evenly into the prepared pans.
Bake in preheated oven for 1 hour and 15 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Cool loaf until it loosens evenly from the pan, about 10 minutes, before removing to a wire rack to cool completely.

2 cups all-purpose flour
1 cup white sugar
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/8 cup poppy seeds
2 (3 ounce) packages instant lemon pudding mix
1 cup Amish Friendship Bread Starter
2 eggs
1/2 cup milk
1/2 cup applesauce
2 teaspoons vanilla extract
1/2 cup vegetable oil
In a large mixing bowl blend together the flour, sugar, baking powder, baking soda, salt, cinnamon, poppy seeds, and lemon pudding mix. Make a well in the center of the bowl.

Increase the cinnamon in the basic recipe to 1 Tablespoon.

Reduce cinnamon to 1 teaspoon. Use brown sugar instead of white sugar.
Add 1 teaspoon pumpkin pie spice.
Before baking, stir in 1 cup canned pumpkin.
Strawberry Amish Friendship Bread
To the basic recipe add 1 small box of strawberry jello and an additional 1/2 cup milk.
Add 1 cup thawed strawberries.
Chocolate Cherry Amish Friendship Bread
Omit cinnamon from the basic recipe.
Replace the vanilla flavoring with almond flavoring.
Add 1 (5.1 oz) box of instant chocolate pudding, an additional 1/2 cup milk, 3 tsp. cocoa and 1 can tart red cherries in water, drained.
Carrot Cake Amish Friendship Bread
Increase the cinnamon in the basic recipe to 1 Tablespoon.
Add to the basic recipe the following ingredients:
3 medium carrots shredded
1/2 cup raisins
1/2 cup chunky homestyle applesauce
1 teaspoon nutmeg
1/2 teaspoon clove
1/2 cup chopped walnuts
Use a a bundt pan instead of a loaf pan. Bake until a wooden toothpick inserted in the center comes out clean.
Can be frosted with cream cheese frosting.
