Home grown chicken is about as good a meat as you can have. When we had fresh butchered chicken it was like eating at my mama's table again.

Opened a jar of duck this evening for supper. Taste so much like beef, that if I hadn't known we don't have any canned beef, that is what I'd have sworn it was. I haven't bought meat in about 6 yrs . Last I bought was a quarter of beef from another homesteader. I'm thinking of raising a couple of steer calves next yr. Probably butcher one as a half grown calf and let the other go another yr. I'm going to ask my sister to swap me some of the beef from her bull for some pork from my pig.
Even though I raise all our meat, we don't eat it daily. Daughter eats lots of beans and we both eat lots of eggs and dairy.
I hatched a bunch of chicks this spring. Not sure how many, over a hundred. Some are bantams, but are games and a small game is still a nice piece of meat. I have a slew of roosters I need to butcher too.

We never had enough duck meat to can but it sure is good eatin. My nephew in Tn. used to bring us 3 or 4 at a time during the season. We eat beans 3 or 4 times a week. Paul would eat them every day if I would cook them. He grew up eating that way and its his favorite. Since I'm having to cut way back to almost no meat we are having less. We talked about it the other day and he suggested we go back to having a little meat in something like rice or dressing and just have dried beans or green beans with it. Works for me. We cant have chickens but I've found a source for fresh eggs that keeps me buried. I think I had 11 doz in the ice box the other day. We do love eggs though so it isnt a problem

Dan and I are at odds about meat. He thinks he needs it, not just everyday, but at every meal. When we met, I was a vegetarian, and had been for 10 years, so you can see the problem.
I much prefer to use meat as a flavoring, if at all, but try to give him a meaty meal, with meat being the main dish, at least 3 times a week. When he had his cholesterol checked recently, his doctor asked him what kind of meat he ate because his levels were very good for a man his age. He said I either boiled or baked everything (not quite true, but close) and the doctor said, "She must love you". I haven't had any complaints about meat since then.
