Oh, glad you said that about mixing the carrots and nuts with the dries. I wonder if you could nuke the carrots and speed up that breakdown. Kind of steam them, you know. My mom has a carrot cake recipe that is amazing. It calls for 2 jars of baby food carrots instead of shredded. I always liked it because 1) it tastes so good, and 2) I didn't shred my thumb on the grater.

I think you could nuke the carrots instead of freezing them. Just be careful not to overcook them or they might not stir in right. Baby food would probably work, too. I just can't bring myself to buy it for 2 reasons - 1) too expensive and 2) too many questions from the cashier. She knows I already have 7 kids.

I just made one of these, and I intend to eat the whole dern thing. It's very good! But I just realized I forgot the vanilla!

If you left the carrots out, would it pretty much be spice cake? Also, a spoonful of pineapple (or zucchini pineapple) might be good in the carrot one.

I did my own tweak on this tonight. Bumped the flour up to 6 Tbsp, left out the cocoa, and shook in some pumpkin pie spice, cinnamon, and cardamom. Had some pineapple juice in the fridge so I used that with powdered sugar to make a glaze. The cake was huge, so I will be a good girl and share with Dave.
