Wednesday at the Amish stores I got a bunch of cheese and then I stocked up on spices and dried veg. I got dried diced tomatoes, dried diced green peppers, dried diced red peppers, dried red chilies, granulated garlic, and dried onion flakes.

I wish our Mennonite store carried all those dried things. Ours mostly has baking and canning supplies. That makes sense, though, since it's also a bakery that also sells home-canned jams and such. I guess she mostly orders what she uses plus enough to sell to home bakers.

Stocked up on pickles and sorghum molasses while in Tennessee. I got 2 jars of hot okra pickles, 1 jar of hot and spicy bread and butter pickles and 2 jars of sorghum molasses. That, along with what I had should be enough to last until September when we head back.

Got unbleached flour for 0.39 a pound. I also stocked up on dehydrated green peppers, chives and celery flakes

I miss Kim. I lost 3 dear friends that year. I was pretty devastated.
I got a spice order (from Atlantic Spice that Kim told me about). I bought a pound of celery seeds (to treat a local woman with RA), Chipotle Chili Powder, ground nutmeg, lemon juice powder, and Mexican chili powder.
For quite some time, oregano hasn't tasted like it used to. I've been adding thyme, along with oregano, to anything that calls for oregano so it would taste right. Well, the Mexican oregano tastes like I remember oregano tasting. I can't find it locally, so I ordered it. I'm glad I bought a lot!

I have 3 shredded pattypan squash in the dehydrator. It looks like I'm going to be overrun this year. I don't see that as a bad thing.

I've been stocking up on a lot of stuff lately. And also did a lot of shopping today, as our state will be on a mandatory mask wearing thing starting tomorrow. In the summer heat, I do not want to wear a mask, so I probably won't go anywhere except to market once a week (we have a booth at the local Farmer's Market and sell veggies and honey and popcorn) and also to church. (not sure if we will be required to wear a mask to church or not). Otherwise I intend to stay home! The garden is producing lots of veggies, and I am well stocked up on flour, sugar, meats, cheeses, paper products and even cat food. Our whole county only has a total of 17 cases of covid since January, so I really don't see anyone wearing a mask. But now the governor has issued the orders, along with a fine and possible jail time for not wearing a mask. I can see in the Twin Cities area, where it's a real hotbed of covid, but out here in the northern boonies it just doesn't make sense. I think a lot of people will just stay home. My raspberries are just about done, and I have put a lot in the freezer, plus juiced up some for jelly. Today I got started on pickle making. Next week I will be canning up peaches. And also canning potatoes. If we ever have another shut down, at least I know we'll be well prepared!

We've been required to wear a mask in public for most of the summer. I just stay home and have others pick up groceries and such for me. I've only been in public 5 times since March 4th and all but one of those times was to go to the bank. I use the drive-through so I don't have to wear a mask. I have asthma and can't breathe in them.
From what I've heard, our county has only had 5 cases of Covid. Now I've heard of another that the news hasn't mentioned and it's a guy my husband and son have been hanging out with. There's an old country store near me where all the old farts hang out, including my husband and son, Nick. Nick just goes there for something to do because his only 2 friends have moved out of the county and none of them drive.
Anyway, Dan and Nick went yesterday to be tested for Covid. They weren't going to, but I pitched a fit until they agreed to go. I really needed to know if they have it so I can take appropriate measures. Not really sure what I would do that I'm not already doing, but surely there is something. Right now I'm making them stay away from me and I'm cleaning and disinfecting the bathroom, light switches, doorknobs, etc numerous times a day. I'm also having them stay in their rooms and keep their clothes separate from mine. Nick actually lives next door (on our property), but usually comes here to eat. He has food at home, but I'll probably take him at least a meal a day and leave it on his porch.
The hospital said the test results should be back in 3-5 business days, so we ought to know something by next Friday.

Oh my! I sure hope those tests turn out negative. But - more people survive this virus than those who don't, so it's not like it's always a death sentence. I actually like to stay home, being the total homebody that I am. I have enough supplies and food to last until the snow flies in November up here here in MN, so unless it's church or setting up at the Farmer's Market (one source of income for us), I don't go anywhere. At the market, there are tables set up in front of ours and all around us. Nobody touches anything but the vendors. Customers point to what they want or tell us, and we bag it up and reach across the tables to them. Some customers are small, so them trying to reach their 3 or 4 feet and us trying to reach our 3 or 4 feet gets to be a challenge. Up until now, we only had to provide hand sanitizer, but now we will have to wear a mask. We are set up in an open air building that just has a roof. The wind blows through there a lot. I can't see that any covid particles would last very long in the winds. But the community we sell at has a very large elderly population, and most of our customers are old people who can't have gardens anymore and like to cook from scratch. We do very well selling veggies and honey and herbs. But I will not like wearing a mask!! I wear those disposable blue ones that are fairly thin and breathable, but I doubt they do much. However, at least I will look "legal"! There's an Amish fellow who has the booth next to ours, and he is wondering how his face mask will do with his bushy beard! He,also, is not happy about the new mask law and may just resort to selling veggies off his farm, since he is on a paved road with a fair amount of traffic. Actually out here in the northern regions of MN we are always pretty well stocked up, since "winter" can last for months. Everyone I know has at least one or two freezers full of meats, venison and frozen fruits and veggies, and a pantry filled with home canned jars of stuff, and other groceries and supplies. This includes me! I call my pantry my "little Wal Mart".

LOL I always had tons of preps when I lived in Michigan because you never knew when you'd be snowed in. Now I keep even more because we're so far from a store. The nearest one is 9 miles and they aren't always well-stocked. Lately, they've been even worse than usual.
I ordered a case of honey from a local guy several months ago. I still don't have it. I suspect I'm pretty far down his list. Hopefully, he'll call soon. I'm almost out. I think I have only about half a quart left.
Ben's boss' mother sent me a gift today - a whole big bag full of zucchini and yellow squash. (So, it begins) I don't know what to do with the yellow squash. I don't care for it, but I won't let it go to waste. I have a recipe for the zucchini I've been wanting to try. It's zucchini gummy candy.
Dan and Nick still seem ok. Hopefully, they don't have it. I've been extra-vigilant about keeping things clean. This morning, I filled a spray bottle with rubbing alcohol and have been spraying everything down with it. It doesn't bother my breathing as much as scented sprays, even those made with natural scents.

For the yellow squash, try this - shred it up and layer it with cooked spaghetti and spaghetti sauce and mozzarella to make a sort of pasta bake. I sometimes do this with green zucchini. I cook the spaghetti noodles and mix them while hot with butter, Parmesan cheese, pepper and salt and an egg. Then in a greased casserole dish, layer pasta, sauce, cheese, and shredded squash or zucchini, then repeat layers. Add more sauce and a bit of Parmesan or more cheese on top, cover with foil and bake at 375 until bubbly, about 1/2 hour. Oh - I break the spaghetti noodles in thirds, so they layer nicer in the dish. Sometimes I use lasagna noodles and add green or red pepper along with the squash.
I also like to cut yellow squash and zucchini or a combination of both into julienne strips and saute that with fresh garlic and onions. Sometimes I eat it plain this way, and sometimes we put this over rice, adding a little shredded cheddar over the top.
Anyway, there's a couple ideas for you! Of course our favorite way to cook zucchini is in chocolate chip zucchini cake!

That sounds like a good way to hide the taste of the squash. I'll try it. I also want to try something I dreamed of when I took a nap today. (I solve a lot of problems in my dreams) I dreamt to sort of grind it up, then season it with taco seasoning to use in tacos, burritos, nachos, etc., in place of meat. I'll use some of it to try that tomorrow and let you know how it turns out. I have plenty to experiment with.
I will probably just shred and dehydrate the zucchini for now. I have a feeling I'll be gifted more of it. When my other son gets home from South Carolina (he's working there) his fiancé wants me to make her some zucchini bread. I would make the chocolate chip cake, but I'm allergic to chocolate.
