I don't eat it often, but I'm anemic so thought I should at least try. It isn't my favorite, but the eggs cut the taste a lot.

Eeewww! It can also be the thymus gland or pancreas. My butcher told me it was the thymus gland and that the gland disappeared as the calf got bigger (it actually shrinks, but never really disappears). That's why I had him save it from a calf. I had him save a heart, too, but I never got the nerve to cook it.

Heart isn't too bad. It is best ground up in sausage though. Kidneys are nasty.

Mom said she tried cooking kidneys for Dad once because he liked them. She said they smelled terrible and made the whole house smell like pee. It took her 2 days to get it aired out. She never tried cooking them again and her story is what has kept me from trying them.
I've cooked tongue several times. I really like that.

I cooked a moose kidney once for someone. He thought it was good, but I gagged the whole time. Never did it again.
