Everyone is having something different tonight. Dan had taco-style lentils and rice burritos (with cheddar, of course), Nick had sliced chicken in cream sauce over noodles, and I'm going to have some quinoa, chicken, and vegetable salad later. I've been cooking, but nobody has been here to eat, so there are quite a few choices in the fridge. We never seem to eat together anymore.

Tonight Jim's having steak and I'm having fish (don't remember what kind though). I think that we'll do cous cous with it.

Yesterday, we ended up going to Panera instead for dinner. Tonight my mom is coming over. I'll make pasta and bread some chicken in a mix of panko and Parmesan cheese and then skillet fry them.

Last night we seasoned up some chicken breasts with salt, pepper, onion powder, garlic powder and dried basil and Jim grilled them. We had them with pasta and marinara sauce and I had some mixed veg (cauliflower, lima beans, green beans, etc.) that I tossed with my pasta.
Tonight we're doing steak on the grill. I think that I'll do a Zattaran rice dish with it.

We still have lots of leftovers from Easter - turkey, ham, Waldorf salad, etc. I used some of the turkey and ham and added swiss cheese and white sauce to make a casserole. I topped it with crushed potato chips for a little crunch and baked it. I have been eating that for the past 3 days. I am putting it on little flour tortillas. I know it's weird to eat the same thing for every meal for days on end, but I do that a lot. I really should quit eating this particular dish since I'm not supposed to be having pork, but it's just so good!

Tonight we're having beef tacos. Jim will have his with regular rice and tortillas. I'll have mine over cauliflower rice (I never do the tortillas) that way I can have a cupcake tonight for a snack

Tonight I think that we're going to do shake-n-bake pork chops and mac & cheese. I'll make carrots too, I think.

Since we keep getting small amounts of random vegetables, I tried a sort of 'recipe' I saw on tv. You mix equal parts of cooked quinoa and brown rice, add whatever vegetables you have onhand, diced cheese (if you have it), cooked meat (if you want), and moisten with dressing. I added diced tomatoes, cucumber, and celery, a few forksful of pickled onions, some mozzarella, and a pound of cooked shrimp that I cut in half (through the length so they still look like whole shrimp, only thinner) and stirred in some Italian dressing and a pinch of red pepper flakes. Since I used about 4 cups of each cooked grain, it made a ton. Good thing, too, because everyone loved it.
I actually made that yesterday, but there is plenty left for today (and maybe tomorrow).
I plan on making bread today. I made some whole wheat yesterday, but I don't like it so I'm giving it to the chickens. I've been experimenting with white bread and hopefully have developed a recipe that comes out soft (even the crust) and stays soft for a few days. Once I'm sure it works consistently, I'll post the recipe.

Tonight we had turkey (burger style) patties, some with swiss, mine with broccoli and swiss, some plain. On the side were some potatoes I'd cooked and reheated. They didn't come back well, so tomorrow, they're getting turned into soup. Lemonade to drink for DH & me, the kids drank water.

I tried the bread recipe again yesterday, but made one change. It turned out to be bread, but nothing like I wanted. I used milk in place of water and that was a flop. I won't do that again (at least I learned from it)
Yesterday was one of those days where one thing leads to another. I started making a sort of hash browns with pattypan squash instead of potatoes for breakfast. I wanted to add onions, but a whole onion was too much (the hash browns turned out great. I'll make them again). In order to not have to save or throw out the onion, I decided to pickle it. I noticed I was getting low on pickled onions, so I cut up 2 more onions and soaked them in cold water. I strained the pickled onions out of the brine and put them in a bowl so I could boil the brine to pour over the fresh onions. The fresh onions filled the jar so I couldn't fit the pickled onions back in. I thought about it for a bit, looked at what I had in the fridge, then decided to make a pasta salad and put the onions in that. I cooked the noodles, cut up some roast beef, cheddar cheese, celery, and tomatoes. I mixed everything together, then stirred in some mayonnaise. In fact, I stirred in all of the mayonnaise, so I had to make more. Once I got everything caught up, I was afraid to start some kind of dessert. It was getting late and I really wasn't up to it. With all that cooking, I ended up having to run the dishwasher twice.
So, supper tonight was pasta salad. (Took the long way around to tell you that, didn't I?)

Gayle, I've made fried potato cakes using zucchini instead of potatoes grated. Turned out pretty good.

I wish I'd thought of that when I had patty pan squash. I cooked them a couple of ways and decided I didn't like'em. Now I've got to cook a couple of spaghetti squash.

I'm cooking chicken today. I bought 5 boneless chicken breasts yesterday. I trimmed them and put them in the crockpot with some Greek salad dressing. It'll be like poaching them in oil. I'll let them go all day or at least until they're tender.
I put all the trimmings, except for the gristle, in the food processor and ground it all to mush. I added an egg, a good amount of bread crumbs, about a teaspoon or so of KFC seasoning, and a little splash of milk. I made that into 2 dozen 1" meatballs and cooked them in the toaster oven, turning a couple of times. They come out tasting like fried chicken. They're pretty popular around here and make good use of what would otherwise be thrown away.
That's probably all the cooking I'll do today since the fridge is pretty full. I'll probably slice and freeze the chicken breasts and, maybe, the meatballs, too. The freezing might not get done until tomorrow, since I like to have them cold before I slice, package, and put them in the freezer. It's easier and neater that way.

I've got 1 tray each of parsley, basil, and slivered sweet peppers in the dehydrator. I think the garden is almost done. I'm thinking of tearing everything out of one of the raised beds. Not sure about the one next to it, yet. Those are the only 2 I planted with annuals this year, although Ben has a couple others. He can deal with those.
I also picked what looks like the last of the cucumbers. I'm going to pickle those, just haven't decided how I want to cut them yet.

I had dibs and dabs of a bunch of stuff in the fridge, so I used the rice and made black bean burgers. I used up the half container of cottage cheese and some spaghetti sauce to make lasagna, and tuned the last of the rotisserie chicken into barbecue chicken. I made it to eat on buns, but it will probably end up on a pizza since I have 5 6" pizza crusts in the fridge and 6 more in the freezer. As long as it doesn't go to waste...
