Back to the OP. I only like to use dried beef after it has been rinsed very well. Otherwise it is just too salty. I normally pat it dry with a paper towel and then use it!

I agree about rinsing it (it's even in my recipe). I use hot water to rinse with. I don't eat a lot of salt, so even a little tastes very strong to me. I can't eat very much of anythng salty, like potato chips - the salt burns my lips and takes days to heal.

I did rinse it but in cool water, so maybe that is why the yuck in the first recipe,
I'll try it again rinsing in warm water and also the great recipes that were given.
