Val, can you up some half pint jars of bacon for seasoning or adding to stuff. I cut it across the slices and render as much of the fat out as I want. Most of the time I just cook it half way. Stuff the jars full of bacon bits and process 10 lbs for 45 min. I just bought a 10 lb box of the scrappy pieces to can up. Its mighty good stuff and I usually wind up with a qt jar or more of good bacon grease.

Gayle, my kitchen rarely gets below 80 in summer and that is in the early morning with a big window fan running all night.
I had not got around to washing off some jars to put on the shelf with canned stuff for a few days. Went to wash them and shelve them this morning and there was mold all over the outside of the jars. Blech!

Our little store where we buy our meat sells pkgs of bacon ends and they do have a lot of fat. Most awesome thrown in with green beans. I've been using bacon grease in bread and always in veggies, and our bacon consumption just ain't keepin' up!

thank you for the canning tip on bacon we have to pigs to pick up the butcher said I have alot of bacon. I will be canning this week

Gayla, that's great about the pigs! I've been making this mayo now for a while, and can whip up a batch pretty quick. Now the thought of buying store mayo is downright icky!

I haven't bought mayo in years. Oddly, the other day, Dan brought home a whole gallon of it. He was so proud of that mayo because he thought he got a good deal on it. (It was $10, which was good for Kraft) Of course, he didn't take into account that it won't fit in our fridge.
