Got mine too! That article by the guy who was in Japan during the earthquake is interesting. Some good letters from people blasting that lady who was less than complimentary of homeschooling in the last issue, too. Boy, they called her out for not citing sources!

Valerie, I also liked the responses to the anti-homeschooling lady. She was way off track with her unsupported opinions. Perhaps I am a little biased though since we homeschooled all 3 of our kids starting in the early 80's. Everything I have read points to the fact that homeschoolers, on average, out perform the public school kids in all areas. This fact was shown by those who responded, and who cited where the information had come from. It was not just what they thought.

That's the thing! My kids were in private school and I'm getting ready to teach public school, and still I can see that homeschoolers out-perform everyone else! It's in the numbers. That lady assumed that anyone who would disagree would be ignorant homeschoolers, not smart enough to research. She made a big mistake not citing her sources.

Got my new Countryside a few days ago and spent part of yesterday reading some of it (while the power was out). I was especially interested in the article on Fenugreek, considering I recently bought a pound of it, then realized I didn't know what to do with it, other than try using some for asthma. The article mentioned it was used to make maple flavoring, so off I went to the kitchen. I probably should have waited till the power was back on so I could research it, but I jumped in with both feet, as usual. I put 1/4 cup of the fenugreek in a jar and added 3/4 cup of vodka. I plan on letting it steep for about 6 weeks. I hope it makes maple flavoring because maple flavoring is expensive! To smell it right now, you'd be sure it won't, though. It's kind of stinky.
Now that the power is back on I'll probably see if I can find directions on how to use it to make flavoring. Hopefully there are instructions somewhere online.

Well, wouldn't ya know, I did it wrong. You're supposed to toast the seeds slightly, grind them while they're hot, then put them in a jar with a vanilla bean, pour hot (not boiling) vodka over them and let them steep for a few weeks. I just made a batch of that, but I didn't throw out the one I started yesterday. When they're done, I'll see if there's any difference. If not, my way was a lot easier and didn't dirty as many dishes.

I liked that article on fenugreek, too, Gayle! I need to find some. I really want to try a few of his recipes. Hey, did you read that letter somewhere in the front, where the guy gave the 20 questions to ask before doing things, to see if they 1)really need to be done and 2) if they could be done a better way or by somebody else? I really like that! I marked that page. I plan to type that list up so when I have a task come up that needs re-thinking, I can just print out that questionnaire and fill in the blanks. I love that kind of thing! I found myself marking quite a few pages in this issue!

Even though it has nearly another month to sit, that maple flavoring I'm making smells like maple - both of them! In fact, my whole cabinet smells like maple. The one with the vanilla bean smells a little better (or smoother or more complex or something), but I have the feeling that you can make it with either method.
When they're done, I'll make 2 batches of maple syrup and see which one is better-tasting or if there's a difference.
