Can I substitute lard for oil in a mayo? "Someone" used all my oil.

Probably. I've used coconut oil before. It got kind of weird in the fridge, though.

I figured it would be the same as using bacon grease. I melted some down and tried it and it STILL didn't set up. I wonder if it's the eggs I used?? Maybe they were to old??

That's weird. I would have expected it to set up super hard. The only time my mayo doesn't set up is if I take too long adding the oil. The recipes say all that drop at a time mess, but my eggs break down if I do that.

M,did you add an acid? I forgot to add vinegar the other day and had to redo it. I just poured the liquid mixture into a big measuring cup, put another egg yolk in the food processor, added some vinegar, and slowly poured the liquid back in (with the food processor running, of course)

I did. I don't know what the deal is really, but I'm wondering if it's the eggs I was using. I buy them at Sam's, 15 dz at a time. I'm wondering if they are older than "other" store bought eggs because of the quantity they sell them in. I don't seem to have this problem with my farm eggs as long as I use vinegar and not lemon juice.

I learned to make mayo with storebought eggs - usually from the 2 1/2 dozen tray. I really don't know why it didn't work. I'm stumped.

That would be a big help. When you made the mayo, did you let the lard cool completely before you started?

It was just warm enough to all be melted. Maybe I can try to video it and post it??

Hey are you using a blender or a food processor? I don't know why, but it makes a difference for me. My mayo only works if I do it in a food processor.

I have better luck with the food processor, too. The blender heats it up and that can cause it to fail.

I have the same issue. Secondly, I don't like the smell of eggs in homemade mayo. Yes, I use vinegar but it doesn't smell good.
