I was very honored to be asked to attend a party last Saturday at that huge mansion I have been working on. Ben told me that I did not need to bring anything but his wife Julie said I could & asked what I would make. I told her the last party I was at I brought avocado deviled eggs which lasted about 10 minutes. My plan was to make half with jalapeno & the other half without. Julie asked if I wanted any eggs since they have chickens on their farm & I said sure. Before leaving that day I looked around for Julie but she had gone out for something. I asked Ben & he brought me 3 dozen. The cartons were old but there were dates crossed out from many prior uses & the one that wasn't crossed out was 10 days ago. It turns out those eggs were from that morning. Fast forward to Saturday morning & I am peeling my first egg. It becomes clear that I will not be bringing as many as I thought & also would be eating many unattractive boiled eggs in the near future. After a dozen attempts it was clear this was futile so plan B. I will make guacamole & salsa & grab some chips on my way there! Well as luck would have it the avocados were too ripe & had black spots in them. I hate failure & wasting food. I just shook it off & went & ate everyone else's

Steaming, Steve! Can't beat it for peeling fresh eggs!

In the future I will always steam them just didn't know that was fail safe if you didn't know how old the eggs were. Still learning how to cook an egg lol! Thanks for the tip I have never had a problem with boiling if they were a week old or so but either way the avocado doomed me.
