Beefy Biscuit Pie contributed by gayla
1 pound beef, cubed 1 cup flour 1 tsp. onion salt 1 tsp. garlic powder ½ tsp. black pepper 2 T. vegetable oil 1 onion, diced 2 cloves garlic, minced 2 potatoes, diced 2-3 carrots, diced 1 cup sliced mushrooms 2 envelopes brown gravy mix 2 cups water
Baking Powder Biscuits: 2 cups flour 3 tsp. baking powder ½ tsp. salt ¼ cup shortening 2/3 – ¾ cup milk
Heat oil in a pan. Mix flour, onion salt, garlic powder, and pepper. Dredge beef in flour mixture. Brown in the pan with onions and garlic, set aside.
Parboil carrots and potatoes, about 3 minutes or more, depending on how big the dice. Add to meat, add mushrooms. Stir to combine.
Mix gravy mix with water. Add to meat and vegetables. Pour all into a 9x13 pan. Bake at 350 degrees for 15 minutes.
Meanwhile, mix up biscuit dough:
Mix flour, baking powder and salt. Cut in shortening. Add milk all at once, stirring with fork until mixture forms a ball around fork. Knead on lightly floured board or in bowl with floured hand, 10 – 12 strokes. Roll dough ¼ inch thick and cut in circles. Arrange on top of the meat and vegetable mixture.
Bake for 25 more minutes, or until biscuits are brown and gravy is bubbly throughout.
