My family won't eat this because none of them like sauerkraut. However, if you like reuben sandwiches, you'll love this casserole!
1 (2 lb.) bag frozen hashbrowns 1/2 c. corned beef, thinly sliced (you can use the lunch meat) 1 (16 oz.) can sauerkraut, drained Swiss cheese 1000 Island Dressing caraway seeds
Fry hashbrowns in skillet until done. Add corned beef. In a 9x13" baking dish, place the sauerkraut in bottom. Put the potatoes and corned beef over this. Spread 1000 Island Dressing over this. Layer Swiss cheese on top. Sprinkle with caraway seeds. Bake at 350F for 30 minutes.
