Cabbage Enchiladas contributed by riverwalk
1 lg can of your favorite enchilada sauce 1 bag of cole slaw mix 2 lb of hamburger 1 onion chopped 1 clove of garlic chopped 2 doz corn tortillas 1 lb cheese grated
cook meat,onions,and garlic together drain add 1/4cup of sauce to meat simmer a few min longer.
fry tortillas in oil to soften drain on paper towels heat sauce in large skillet. remove from burner dip tortillas one at a time in sauce place on dish and fill with meat cheese and coleslaw mix roll up tightly and put into lg pan unto all tortillas are filled and sprinkle additional cheese on top and cover with foil bake for 30 min at 350
