I made these today. They taste like extra-crispy french fries. I like that they can be made ahead, even several days, and fried as needed.
French Fried Mashed Potatoes
Potatoes, peeled and diced (however many you need for your family) Flour Salt Pepper Old Bay seasoning, optional
Boil potatoes until tender, drain well, and mash. Add about as much flour as you have mashed potatoes (by volume), season with salt, pepper, and Old Bay, if usuing. Mix thoroughly.
Line a loaf pan with plastic wrap, leaving enough at the ends to cover pan. Place potato mixture into pan, cover with extra plastic wrap, and press firmly into pan, leveling out mixture as you press. Refrigerate overnight.
When you're ready to cook these, pull loaf out of pan, slice into 1/2" slices, then cut the slices into 1/2" strips. Deep fry until golden brown, drain on paper towels, sprinkle with salt, and serve hot.
