The boys went to Gatlinburg last weekend and were taken with the barbecue sauce at Corky's. They brought me a bottle and I've spent the day recreating it. The first batch was close, the second was darned near perfect.
Memphis-Style Barbecue Sauce (Like Corky's Original)
1 1/2 cups water 1 (6 oz) can tomato paste 1/3 cup white vinegar 1/4 cup corn syrup 1/4 cup dark molasses 1/4 cup dark brown sugar 2 t. Kosher salt 2 t. liquid smoke (I used Mesquite) 1 t. Worcestershire sauce 1 t. cayenne pepper 1 t. paprika 1 t. cooking oil (I used corn oil) 1/2 t. onion powder 1/2 t. garlic powder
Whisk together all ingredients in medium saucepan. Bring to a boil and cook about 10 or 15 minutes or until as thick as you like.
Makes about 3 cups.
