Onion Marmalade
8 cups sliced onions 1/2 cup white vinegar 1 cup sugar 1 t. salt
Put all ingredients into a large pot. Cook on medium heat until thick and most of the liquid has evaporated, about 45 minutes.
Store in jar in refrigerator.
Use warm on hamburgers or other hot sandwiches or chilled, as a relish.
Makes about 3 cups.
