Cheesy Onion Casserole
Onions (amount of ingredients depends on how big your pan is) Shredded Cheddar (I use sharp) Butter, melted Salt and Pepper, to taste
Peel onions, cut in half from top to bottom, and slice into fairly thick slices (about 1/4")
Butter baking dish and put in a loose layer of onions. Season onions with salt and pepper. Cover with a layer of shredded cheese, then drizzle with a little melted butter. Repeat layers.
Cover pan with foil and bake about 45 minutes in a 350 degree oven. Remove foil and bake until cheese is bubbly and beginning to brown around the edges.
Serve as a side dish or on a hot sandwich, such as burgers or roast beef. Reheats nicely.
