Mexican Cornbread contributed by gayla
2 pkg cornbread mix, mixed seperately (Jiffy) 1/2 - 1 pound ground beef 1/2 lb. cheese (cheddar is delicious) 1 large onion, chopped 4 jalapenos, chopped (I use a can of RoTel Tomatoes)
Mix one pkg corn bread mix and pour into spray casserole dish. Brown ground beef with onions.
Add jalapenos (or RoTels) and mix together.
Spoon meat mixture over cornbread mix in dish.
Sprinkle cheese over meat.
Mix 2nd cornbread mix & spread over cheese.
Bake in 350 degree oven for 30 - 45 mins until cornbread is finished.
