Noodleless Lasagne contributed by gayla
1 lb. ground beef 1 Cup spaghetti sauce 1 can (4oz.) sliced mushrooms 1 C. ricotta cheese 1 egg, beaten 1 1/2 C. shredded mozzarella 1/2 Tbs. Italian seasoning 20 to 25 slices pepperoni
Preheat oven to 350. Brown the beef and drain. Add the spaghetti sauce and mushrooms and simmer for 10 min.
In a small bowl, mix the ricotta, egg, 1/4 C. of the mozzarella, and Italian seasoning. Beat well with a fork.
Grease an 8x8 baking dish with nonstick spray. Spread 1/2 the beef mixture in the bottom of the dish. Spread 1/2 the ricotta mixture on top. Lay 1/2 the pepperoni slices on top. Sprinkle with half remaining mozzarella. Repeat the layers, and bake until bubbly, about 20 min.
