I tried this today since I had all the fresh ingredients. I love it! I'm going to try it again with dried herbs so I don't have to limit myself to having it only in the summer. If you don't like spicy food, you might not like this.
Cowboy Butter Sauce
4 tablespoons butter, melted Juice and zest of half a lemon 4 cloves garlic, minced 1 tablespoon Dijon mustard Pinch of cayenne pepper 1/4 teaspoon paprika 2 tablespoon fresh chopped parsley 1 tablespoon freshly chopped chives 2 teaspoons minced thyme 1/4 teaspoon crushed red pepper flakes Salt and freshly ground black pepper
In a small bowl, combine melted butter, lemon juice, garlic, mustard, cayenne, and paprika. Whisk to combine.
Stir in parsley, chives, crushed red pepper flakes, and thyme and season with salt and pepper.
Serve with grilled meats, like steak or chicken bites, for dipping. Enjoy!

I just made this with dried herbs, instead of fresh, to see how it was. I used half the amount of dried herbs. It lacks a little of that fresh taste, but it's not bad. Now I can make it in the winter. Yay!
