I saw this recipe on Rachel Ray's show this morning. I thought, 'there's no way that will work', so, naturally, I had to try it. To my surprise and delight, not only did it work, but it's actually good!
Cottage Cheese and Oat Pancakes
1 cup plain old-fashion rolled oats 1 cup cottage cheese 2 eggs milk, if needed
Put oats, cottage cheese, and eggs into a blender. Blend until smooth, scraping container as necessary. If mixture is too thick, add a little milk to thin it down. Pour mixture into bowl.
Heat griddle (or skillet) until a drop of water skittles about. Grease (I used butter) and put batter on pan with a large spoon to make 4" pancakes. Cook until pancakes get little bubbles in the center and are nicely brown on the bottom, flip, and brown on other side. Makes about 16, 4" pancakes. Serve with syrup and/or fruit.
