If you need a little, unfussy cake, this is a good one. It uses common ingredients and comes together fast. I made it into a trifle today.
Dinette Cake from Betty Crocker
1 1/2 c. cake flour or 1 1/4 c. all-purpose flour 1 c. sugar 1 1/2 tsp. baking powder 1/2 tsp. salt 3/4 c. milk 1/3 c. shortening 1 egg 1 tsp. vanilla
Heat oven to 350 degrees. Grease and flour square pan, 8 x 8 x 2 inches or 9 x 9 x 2 inches. Measure all ingredients into large mixer bowl. Blend 1/2 minute on low speed, scraping bowl constantly. Beat 3 minutes high speed scraping bowl occasionally. Pour into pan.
Bake 35 to 40 minutes or until wooden pick inserted in center comes out clean. Cool on cooling rack. If desired frost cake with your favorite icing or make it into a strawberry shortcake or a trifle.
