Twice Baked Patato Casserole contributed by gayla
3-5 lbs. peeled cooked potatoes 3 oz. softened cream cheese 3/4 cup sour cream 1/4 cup softened butter 1/2 tsp. garlic salt 1 tsp. chives 4 strips cooked bacon, crumbled 1/2 cup shredded cheddar cheese Salt and pepper
Mash the potatoes. Whip with the cream cheese, sour cream, butter, garlic salt, salt, and pepper. Stir in the chives and bacon. Put into a greased 1 1/2-quart baking dish. Top with the shredded cheese. Bake uncovered at 350° F for 30 minutes.
Make ahead and refrigerate. Bake just before serving.
