This is a bit different and it's really good. The measurements depend on the size of your baking dish and how much you want to make.
Oil or butter a baking dish/casserole.
Peel sweet potatoes and slice very thin using a veggie peeler or a very sharp knife; set aside.
Peel and slice thin Russetts; layer in bottom of baking dish, overlapping slightly. Drizzle with a bit of olive oil, some fresh minced garlic or garlic powder, salt and pepper. Top with shredded cheese - a blend of cheddar and mozzarella is nice for this. Top with sweet potatoes. Season and sprinkle with cheeses. Slice red potatoes (unpeeled) and place on top. Season and sprinkle with cheeses. Continue layering and seasoning, ending with cheeses on top.
Cover with foil and bake in preheated oven (350* F) until potatoes are tender. Remove from oven and let rest 10 minutes before cutting
