-------------------------------------------------------------------------------- 1 c. chopped onion 1 small can chopped chillies or 1 c. chopped bell pepper 1/4 c. bacon drippings 1 (1 lbs.) can tomatoes, cut up 1 c. water 1-1/2 c. uncooked rice 2 t. salt 1/2 t. chili powder 1/2 t. ground turmeric
Saute onion and pepper in bacon drippings until soft. Add tomatoes, water, rice and seasonings. Bring to a boil. Reduce heat; cover and simmer 20 minutes.
Makes 6 servings.
