Mustard Baked Potatoes
6 med. potatoes (about 2 lbs) cut into chunks 2 T. oil 1 clove garlic, minced 1/2 t. Italian seasoning 5 T. Dijon mustard
In small bowl, mix oil, garlic, Italian seasoning, and mustard.
Place potatoes in a greased 9"x13" pan. Pour mustard mixture over potatoes and stir well to coat evenly.
Bake, uncovered, at 425 for 30 - 45 minutes, stirring occasionally, until fork-tender and golden brown.
Salt lightly, if desired.
