Warm Green Beans Vinaigrette
1 lb. green beans 2 T. apple cider vinegar 1 t. Dijon mustard 5 T. vegetable oil 1/2 cup red onion, peeled and finely chopped (or use yellow onion) 1/4 t. salt 1/4 t. black pepper
Wash beans, trim ends. Boil 1 inch of lightly salted water in large saucepan; add beans, cook, covered, for 10 minutes until crisp tender.
Meanwhile, make dressing by combining remaining ingredients.
Drain beans when done, toss immediately with dressing.
Serves 4 - 6
