Homemade Rice A Roni
1 cup long grain white rice, uncooked 1 cup thin spaghetti, broken into 1/2" pieces 1/4 cup slivered almonds (optional) 3 T. butter 2 3/4 cups water 1 T. beef, chicken, or vegetable bouillion powder or granules 1/4 t. onion powder 1/4 t. garlic powder 1 T. parsley 1/4 tsp dried thyme or poultry seasoning 1/8 t. black pepper
Melt butter in medium saucepan or skillet, add uncooked rice, pasta pieces, and slivered almonds (if using) and stir about 5 minutes until pasta is lightly browned.
Add remaining ingredients. Heat to boiling, reduce heat, cover and simmer for about 15 minutes. Do not lift lid. Remove from heat, fluff with a fork, cover and let steam an additional 5-10 minutes.

I'm goin to try this for dinner today. Paul loves RiceARoni but it doesnt taste like it used to. They must be skimping on some ingredient. Maybe this will taste like it used to. We'll see

Peggy, this one is like the old Almond Chicken Pilaf. I haven't been able to find the mix for nearly 15 years, so I make this. It's pretty good.
Sometimes, I make it with other nuts, like pecans or walnuts, in place of the almonds.

Whats funny is that I just found a vacumn sealed jar or slivered almonds in the store room and wondered "what can I put these in".

I'm bumping up this thread because I'm new here and just getting around to reading everything! This Homemade Rice a Roni recipe is pretty much what I have tried to make over the years, but I didn't use the seasonings you mention here. They sound good. I'll have to add these seasonings and try it tonight! I'm making chicken for the hubby and this will go good with it. I'm vegetarian, so I'll probably just throw some cooked kidney beans into the rice mix to give more protein .

I gave this recipe a try tonight for the Homemade Rice a Roni. It was very tasty!! Exactly what I was looking for! It was good with small red beans mixed in, too. thanks for the idea.

I'm glad you liked it, Patty! I should make this again this week. I haven't made it in a while. I have part of a pack of slivered almonds that fall out everytime I open the freezer, probably leftover from the last time I made it.

Thanks for bumping, Patty! I've been here a while and still haven't read everything. I would imagine with tweaking the seasonings you could pretty much make this go with just about anything.

I made this last week. We all ate it, but there was still about half of it leftover (it makes a ton!) The next day, I added 2 cans of tuna to the cold rice mixture, then dressed it with 3 T. oil, 1 T. vinegar, 2 heaping T. mayo, and 1/2 t. Ranch dressing mix (dry) mixed together. I know it sounds gross but it was delicious! Even my picky eater ate 3 helpings! (the Ranch dressing mix was so he wouldn't know it was really a creamy vinaigrette)
