Pasta Salad
- 1 lb cooked noodles (I prefer Rotini, but elbows work well, too) - 1 cucumber, diced - 1 small onion, minced - 1 or 2 tomatoes, diced - 1/2 green pepper (or more), diced - 1/4 to 1/2 lb. cheese, diced (I like cheddar, mozzarella, or colby, but use whatever you like) - 1 lb. bacon, cooked crisp and crumbled (or use storebought bacon bits) - Mayonnaise (enough to moisten ingredients) - salt (or celery salt) and pepper. to taste
Just mix it all together.
You can also add any of the following~
hard-boiled eggs, chopped diced pickles or relish (sweet or dill) chicken, cooked and diced ham, cooked and diced beef, cooked and diced broccoli, raw, par-boiled, or cooked cauliflower, raw, par-boiled, or cooked pepperoni olives, sliced (green or black) peas green beans different spices (such as garlic, oregano, basil, or whatever you might like) or just about anything else you might like
Note: Everything but the pasta is optional. You can even use Italian dressing, instead of the mayonnaise.
