Sweet Potato Biscuits
1 good size sweet potato (not huge or tiny), cooked and mashed (I nuke mine wrapped in a paper towel. You should have about 3/4 cup of mashed potato) 1/2 stick butter, softened (more melted for brushing on) 1 1/4 cups flour 4 teaspoons baking powder 2 heaping tablespoons sugar 1/2 teaspoon salt 2 - 4 Tablespoons milk
Preheat oven to 450. Mix sweet potato and butter in a bowl. Sift together (in a different bowl) flour, sugar, baking powder, and salt. Add to sweet potato 1/2 cup at a time. Add milk, starting with 2 tablespoons, and adding a little more as needed. The amount will depend on the amount of moisture in the sweet potato. Turn out onto lightly floured board (i.e, the counter). Gently pat out to about 1/2 inch thick. (Actually, I like mine about 3/4"). Cut with biscuit cutter and put in greased pan. Brush with melted butter, and bake until just browned a little. Brush with butter again when done. This made 7 biscuits last night, but mine a little thick. The first time I made them, I made them thinner and got 9 out of it.

I have a couple of leftover sweet potatoes in the fridge. I think I'll try these tomorrow.

Had these for dinner. Very nice, very light. Good flavor. I used canned sweet potato puree, and it worked fine.

Oh, FYI, I don't do that two bowl thing. I do the wet things first, to get the butter melted into the hot taters, then dump in all the dries at one time and mix just until moistened.

Used this as peach cobbler topping today for breakfast. DH said, "Eh," he liked plain better. But he scarfed it up as fast as the boys did. Success at BnB breakfast, too. Not quite as "scarfed," but the guest breakfast offered a lot more food than I did to my family.

I had a piece later myself. I like the flavor a lot, but I noticed some of the biscuit topping got a *lot* thicker than I would prefer. But I'd definitely do it again...just maybe roll out the biscuit dough nice and thin instead of dropping it on as I did.

I love these things. My recipe is packed up and I keep looking at the can of s. taters in the cupboard and wishing for my book. This will do just fine. Try brushing them with cinnamon butter. Thats good.
