I've been playing in the kitchen today. I had the idea you could make hot coleslaw, but couldn't find a recipe, so I made one up.
Fried Coleslaw
1 large carrot, peeled and shredded 2-3 celery stalks, trimmed and sliced thinly 1 small onion (or half a large one), quartered and sliced thinly 4 cups cabbage, sliced thinly 2 T. bacon grease (or oil) 4 T. apple cider or white vinegar 3 T. sugar 1/2 t. celery seed 1/2 - 1 t. salt (or to taste) pepper (to taste)
Melt bacon grease in large skillet. Add celery, onion, and carrot and cook until tender, about 5 minutes.
Stir in cabbage and cook until wilted.
Stir in vinegar and sugar. Continue cooking until moisture is absorbed. Stir in celery seed, salt and pepper. Serve hot.

How in the world did I miss this. Yummy. I have a cabbage that needs fixin. I was goin to use half of it for egg rolls. I'll make this with the other half.

Peggy, if it isn't quite spicy enough for you, add a little cayenne. I did that the second time I made it and I liked it better. I add cayenne to my regular coleslaw, too.
