Twice Cooked Potatoes
Scrub as many new potatoes as you need for your family. If you don't have new potatoes, use small regular potatoes (that's what I did).
Put the potatoes in a pan, cover with water, add some salt, and bring to a boil. Cook until potatoes are fork-tender. Drain (I dumped them in a colander) and let cool, at least until you can handle them.
Put on some deep oil to heat to 375 degrees.
Meanwhile, cut an X in each potato and gently squeeze them till the insides pop out of the cut a little.
After you have them all prepared, deep fry in the hot oil until they are brown and crispy. Drain and sprinkle with coarse salt (I used Kosher)
Tyler Florence made a similar recipe and served his with aioli (garlic mayonnaise), but I didn't feel like fooling with that, so I served mine with ketchup, sour cream, salt, and pepper and let everyone put whatever they wanted on theirs.

yum, that sounds good. I made twice baked potatoes the other day.... which is similar to your's.

Doris, you mash the insides of the potatoes for twice-baked, don't you? These are more like fat, tender french fries. The skin gets really crispy, while the inside stays soft and moist.

I love these! I like the way the cut part of the potato tastes where it gets fried.

that sounds awesome... its definitely on my "must try" list. I think right now they have the new potatoes out anyway
