This makes a lot, but it can be cut down or you can freeze part of it for another meal (or meals)
Coq au Vin
2 packages of bacon 2 whole chickens, cut up 4 large onions, cut into large chunks 3 cans mushrooms 2 cups red wine (I used Merlot, but any dry red wine will do) 2 cans chicken broth (or 4 cups homemade) 1 T. minced garlic 2 T. tomato paste flour salt pepper
Turn oven to 350 to preheat. Grease baking dish, big enough for chicken and sauce (I used a roasting pan)
Cut bacon into pieces, then fry in large skillet. Remove bacon and reserve.Season chicken with salt and pepper, then dredge with flour and fry in hot bacon grease, browning both sides (chicken will not be done in the middle). You'll need to cook the chicken a little at a time, since it all probably won't fit in the pan.
Place the chicken pieces in prepared baking dish. Top with onions and mushrooms.
Add some flour (somewhere around 1/4 cup) to the remaining bacon grease, to make a roux. After cooking for a minute, add garlic and tomato paste, then remove from heat and pour in the wine. Put it back on the heat and add broth. Cook and stir for a minute, or until mixture thickens. Add salt and pepper to taste, then pour over chicken in baking dish. Top with reserved bacon pieces. Cover tightly and bake for about 1 1/2 hours.
