1 c. uncooked wheat berries 1 lb. boneless, skinless chicken breasts 1-1/4 c. mayonnaise 2 stalks celery, chopped 1 small apple, chopped 1 small red onion, finely chopped 4 T. chopped pecans or walnuts 1/2 c. chopped fresh parsley 1-1/2 t. maple syrup 1 T. white wine vinegar 1/2 to 1 T. apple juice salt freshly ground pepper
Bring 3 c. water to a boil. Add the wheat berries and lower the heat.
Simmer, covered, for 1-1/2 to 2 hours (or for 30 minutes if the berries are pre-soaked), or until water is absorbed and the berries are tender. Set aside.
Meanwhile, place the chicken between pieces of wax paper. With a meat mallet, pound slightly to an even thickness.
In a non-stick frying pan over medium heat, cook the chicken for 10 minutes, or until it is cooked through. Add a little water to prevent burning. Remove the chicken from the pan. Allow to cool slightly and cut into cubes.
In a large bowl, combine the wheat berries, chicken, mayonnaise, celery, apples, onions, pecans or walnuts, parsley, maple syrup, vinegar, juice, salt and pepper. Taste to adjust the seasonings and chill until ready to serve.
