BREAD AND BUTTER PICKLES
1 large cucumber, thinly sliced
1 medium onion, thinly sliced
1 cup sugar or 2/3 cup fructose or 1 cup Splenda Granulated Equal Measure Sweetner
1/2 cup white vinegar
1/2 teaspoon mustard seed
1/4 teaspoon turmeric OR pinch of saffron
1 teaspoon salt
In 2 quart microwave safe bowl combine all ingredients and mix well.
Microwave on high 2.5 minutes then stir well and microwave again for 2.5 minutes. Allow to cool then chill for at least 2 hours before serving. Put into jar with tight fitting lid.

This is a new one for me. Never heard of such a thing. I have a crisper drawer full of good cukes. I think Ihave everything else,sooo we shall try this too. Thanks for sharing

I knew this one was a hit when my Joe ate one from the first try and he said, "these pickles taste just like Grandma Doughty's"! I knew I had done the absolute best job that could have been done with this pickle recipe. His grandmother was his hero!!

I'm gonna try these. I mess up every pickle I try to make, but these sound pretty much fool proof! And one jar at a time is nice.

Belinda was hesitant about trying them. The last time she tried bread and butter pickles she didn't like them. Then she realized it had been about 10 years since she'd tried them, so she said she would try one.
She popped it in her mouth, put the lid back on the jar, put the jar in the fridge, then went and sat in the livingroom. I sat on the sofa and stared at her.
Finally, she said, "They're not as bad as I remembered".
I didn't say a word, but kept staring at her.
Finally, she burst out, "OK! I LOVE THEM! I COULD EAT THE WHOLE JAR!"
When I quit laughing, I just said, "I thought you would".

I'm gonna try these. I mess up every pickle I try to make, but these sound pretty much fool proof! And one jar at a time is nice. Same here cookinmom! If anyone wants a recipe for pickle mush talk to me! This is the first year I have tried to make pickles & am still new to canning. My garden this year is producing around 15-20 cucumbers a day for just 3 plants. They are not pickling cucumbers & I can only eat/give away but so many. I will try this recipe this weekend & will have to figure out how to can it. I am very new to that.

I'll try this tomorrow. I think I have everything. Mike doesn't like bread and butter, so I always make dill, but I'll see what he thinks of these.

Yay!!! This was the pickle recipe I was looking for, back when I had cucumbers! I knew there was a recipe here for making one jar at a time!
OK, if the garden ever dries out so I can plant again, I will just have to plant more cukes so I can make these!
