Blender Mayonnaise
1 egg 1/2 teaspoon prepared mustard 3/4 teaspoon salt 1/2 teaspoon sugar Dash of pepper 3 tablespoons lemon juice or vinegar 1/3 cup salad oil 2/3 cup salad oil
Put all ingredients except 2/3 cup oil in blender container. (I prefer the food processor) Cover and turn to BLEND. Remove cover insert (a small, removeable section in the center of the cover). While the blender is running, pour remaining oil in center of egg mixture in a thin, steady stream. Blend just until all oil is added and mixture is thick and smooth.
Makes 1 1/4 cups.
Note: I often tweak this recipe, adding herbs, spices, more mustard, pickles, etc., to complement whatever I'm serving it with.

This is mine too. Sometime try the mustard with horseradish. I did it by accident once and its very good..

I've added plain horseradish, to serve on roast beef sandwiches. It tastes like Arby's horsey sauce.

Here's a variation that's just a little bit different, from "The New Cookin' with Home Storage".
1 egg 2 tsp. sugar 1/4 tsp. salt 1 1/2 T. vinegar dash of pepper 1 C. oil
Put all ingredients in the blender, except for 3/4 C. of the oil. Blend together well. While blending, slowly add the remaining oil until the mayonnaise is thick.

With the added sugar, I'd guess it would taste like Miracle Whip.

I made a batch of mayo today, then thought of a variation to try. I made another batch, but added 2 T. of nutritional yeast and about 1/4 t. paprika with the salt and dry mustard. I didn't change anything else. It's still a mayonnaise, but with a hint of cheese flavor.
