Watermelon Ice
6 cups watermelon, cut in chunks and seeds removed 3/4 cup sugar 4 T. lemon juice
Puree watermelon. Stir in lemon juice and sugar. Pour mixture into a baking pan and put in freezer. When it's frozen around the edges, stir thoroughly with a fork. Place back in freezer. Each time it freezes around the edges, stir it with a fork until it's all frozen. Spoon frozen mixture into a storage container and store in the freezer.
Instead of pouring it into a pan, you can pour it into individual serving dishes and freeze it until resembles a soft sherbet, then serve.
Makes 6-8 servings.

I made this stuff today. It lasted maybe 5 minutes. I have a double freezer thing that goes in the freezer. It was frozen like a slushy in less than 30 min. The guys loved it and tomorrow when I make with the grands I foresee lots of smiles. Its really good stuff. I had a little left that wouldnt fit in the freezer so I did it in a metal pie pan. I think Ilike it better.

I was goin to ask that question. I'm thinking about getting some freezer containers and doin just that. Its so good. Then I was contemplating adding some strawberries to the mix. yum

You can also freeze it in ziplocks, so it lays flat in the freezer. Easier to stack.
Strawberries would be good in it. If you have a lot of them, you could even make this with strawberries, instead of watermelon.
