This is one for the kids.
1 (20 oz.) pkg. frozen fish sticks (about 30 sticks) 1/2 c. mayonnaise 2 t. hot sauce, or more 2 t. lemon juice, plus lemon wedges for garnish 5 sub-style sandwich rolls, split 2 c. shredded lettuce 3 tomatoes, sliced
Preheat oven to 475F. Cook the fish sticks as directed.
In a small bowl, stir together the mayonnaise, hot sauce and lemon juice (I don't stir in the hot sauce, I save that out because the little girls don't like it spicy -- so I just pour it on my sandwich).
A few minutes before the fish sticks are done, toast the rolls in the oven. Smear 1 side of each roll with the mayonnaise mixture. Add a layer of fish sticks and top with the lettuce and tomatoes. Serve the sandwiches with lemon wedges and spicy mayo on the side.
