Zucchini Spaghetti contributed by kathyinmd
4 medium zucchini, sliced in1/4-inch rounds 3 green onions, chopped 1 small green bell pepper, diced 1 large celery rib, chopped 1 clove minced garlic 3 medium tomatoes, peeled and diced or 1-1pound can tomatoes, drained
8 oz. cooked spaghetti
Salt, pepper, oregano, basil to taste Parmesan cheese
Sauté zucchini, onions, bell pepper, celery, and garlic in olive oil until soft. Add tomatoes, cook until softened. Add seasonings…serve over cooked spaghetti…top with Parmesan cheese.
The original recipe calls to bake in a casserole for 30 minutes at 350º but I prefer it right from the skillet…
