2 c. cooked pinto beans 1 onion, diced fine 1 tsp chili powder 1 tsp cumin 1/2 tsp salt 2 tbsp canola oil
flour tortillas grated cheese salsa oil for frying
In a skillet, heat two tbsp canola oil. Fry diced onions in oil until carmelised, add beans and salt and toss well. Fry for a minute or two then add seasonings and a cup of water (more if needed). Cook and mash to make refried beans.
Lay out your tortillas. Spread a thin later of refried beans over half the tortilla. Dot with salsa and sprinkle generously with cheese. Fold blank half of tortilla over the filling to make a sort of half-moon shape. Continue assembling quesadillas.
In a skillet, heat enough oil to cover bottom of pan about a cm. deep. Fry quesadilla until golden brown, flip and fry the other side. Drain on paper towels and cut into fourths. Serve smoking hot with guacamole and sour cream.
