I picked what was left of my peppers before the frost got them, so I used them to make this. I used a combination of Jalapeno, Serrano, and Poblano peppers. It came out slightly sweet and fruity, with a nice afterburn.
Bottled Hell Hot Sauce
2 c. chopped hot peppers (seeds and stems removed) 3 c. cider vinegar, divided* 3 cups (24 oz) ketchup, store-bought or homemade
Mix hot peppers and 1 1/2 c. cider vinegar in large saucepan. Let stand for 30 minutes. Add remaining cider vinegar and ketchup. Bring to a boil, reduce heat and simmer 15-20 minutes, stirring occasionally.
Pour hot sauce into a sterilized jars and adjust lids. Process in a boiling water bath for 10 minutes.
Makes 8 cups.
*If you want a thicker sauce, reduce vinegar to 2 cups, adding 1/2 cup to the peppers and let stand, then add remaining 1 1/2 cups along with the ketchup. No other changes (except it will make less)
