Healthier Sausage 1 lb. ground chicken or ground turkey 1/2 tsp. dried sage 1/2 tsp. dried marjoram 1/2 to 3/4 tsp. dried thyme 1/4 tsp. ground cayenne pepper heaping 1/4 tsp. ground allspice 1/4 tsp. freshly ground black pepper about 3/4 tsp. kosher salt 1 garlic clove, finely minced or pressed 1/2 Tbsp. maple syrup 2-3 tsp. olive oil
Lightly mix all ingredients together until the herbs/spices are well incorporated – make sure you don’t over mix!
Divide the mixture into 4 equal parts, and then make 4 (or 2, for 2-oz. patties) patties from each part.
Heat a nonstick pan over medium heat and add 1 tsp. of oil. Put 1/3 or 1/2 of the patties (depending how big your pan is and how much space your patties take up) into the pan and cook about 2 minutes per side or until browned and cooked through. Repeat with the next 1-2 batches, adding an additional teaspoon of olive oil per batch.
Ground chicken or turkey breast will make a leaner patty, but dark (or a mixture of white and dark) meat will make a tastier patty.

I think I'm going to try this with some of that turkey I got for $1 a pound, that nobody likes.

hmmmmm..... I wonder if maple syrup was missing in my sausage, cause I never got the taste together. It tastes a lot closer to sausage now, cause I'm using poultry seasoning though. LOL. I have to try that. Thank you

I think I'm going to try this with some of that turkey I got for $1 a pound, that nobody likes. Why don't they like the turkey meat?

It's too bland. I even used it in chili and tacos, but they still weren't thrilled with it.

I got some of that turkey two I been cooking for the dogs .. they dont even want .. cats too smart to eat it

I have a really good sausage recipe now. I had to make my own overseas, now my daughter wants me to make it and not buy it!!

I've read that some of that ground turkey, especially the cheap kind, has the skin in it as well as the meat. That's probably why nobody likes it. Turkey skin is only good fried, or roasted crispy.

I wonder if it would be better to fry the cheap kind till it's crisp, instead of just cooked, like hamburger.

Maybe, so. Sometimes I fry my hamburger a little crisp, too. It makes it taste different.

That's what my mother always did and that's why my spaghetti and lasagna didn't taste like hers. Hers had a richness that mine didn't have until I started browning my hamburger really well.
