I made this last night to go with pork chops that I cooked in the George Foreman grill. I didn't want to make greasy gravy to go with the rice and defeat the purpose of the low fat cooking.
1 can diced tomatoes 1 can black beans well drained 1 can corn drained or frozen corn chopped onion chopped green pepper rice
put all ingredients in a pot, add 1 1/2 cans of water from the tomato can. Heat through and season with garlic powder and ground red pepper. It can have salt added, I only add salt after it's made. Add about 2-3 cups of rice and cook until the rice is done.

That not only sounds tasty, but it looks like a good prep recipe, too.
I always add salt at the end of the cooking time. It seems to cook out if I add it earlier, then I have to add more. I don't really want all that sodium, so I add it last. The only thing I add it to at the beginning is potatoes. They don't seem to cook right without it.

I make a version of that as well only using Rotel tomatoes instead of plain tomatoes. I also add one minced garlic clove. Very tasty.

You know, if you add some cooked ground meat once the rice is done, you'd have a complete meal.
Though I guess that the beans would be your protein.

Sometimes I add hamburger or diced cooked chicken. When I add meat, I also add a small can of tomato sauce.
