Spaghetti Tomato Salad
1 pound of spaghetti 1 cup of fresh basil leaves, shredded 8 oz cherry tomatoes, cut in halves 1 clove of crushed garlic 1 cup of halved bottled artichokes 1 tbs. balsamic vinegar 1/4 cup of olive oil 3/4 cup of fresh grated Parmesan
Boil pasta until al dente. Drain and rinse under cold water and drain again. Combine the basil, tomato, garlic, artichokes, oil and vinegar in a salad bowl. Mix in the drained pasta. Add the Parmesan last. Toss well before serving.
