Southern-Style Tomato Pie
Crusts for a 2 crust 9h pie
4 ripe tomatoes, peeled, cored, and sliced
1/2 medium onion, sliced paper thin
3/4 cup shredded Sharp Cheddar cheese
3/4 cup shredded Monterrey Jack cheese
3 slices bacon, cooked & crumbled (optional but oh so good!!)
3 TBSP mayonnaise
1 tsp dried basil
salt/pepper to taste
Place the tomatoes in a colander, sprinkle with salt and pepper. Allow to sit and drain while preparing other ingredients.
Preheat the oven to 425‹ F.
In a bowl combine the cheese, bacon, and mayonnaise. Mix thoroughly.
Lay bottom pie crust in a 9 pie plate. Arrange a layer of tomatoes, sprinkle with half the sliced onion and 1/2 tsp dried basil. Repeat second layer with the remaining tomatoes, onion, and basil. Top with cheese mixture. Add second crust, seal the edges, and vent.
Bake for 45 minutes, checking after 30.
Allow to cool before serving for uniform slices.
