Ramen Noodle Salad
1 pkg (3 oz) ramen noodle oriental soup mix 1/4 cup butter 1 cut walnuts or pecans, chopped 1 head romaine lettuce, washed and torn 1 16 oz pkg of fresh broccoli flowerets, chopped 4 green onions - chopped
Salad Dressing: 1/2 cup vegetable oil 1/4 cup sugar 1/4 cup red wine vinegar 1 tbsp soy sauce 1/2 tsp salt 1/4 tsp pepper seasoning packet from noodles (optional) whisk together - set aside
Break noodles into pieces. Melt butter in pan over med. heat. Add noodles to pan saute till lightly brown. Add nuts. (nuts seem to brown faster than the noodles) Toss noodle/nut mixture with greens. Pour dressing over all and toss again. Serve immediately.
If I'm taking this somewhere, then I keep everything separate until it's time to serve.
